Yumtastic Soup
So I was on the usual road trip home from work with Trish yesterday when we were talking about soup, now I have been making this spicy tomato soup for about two years and am kind of getting sick of it, and then she said ?why don?t you make carrot soup? so I did, off on my merry way to Tesco and I bought all the lovely ingredients, plus other weekly shop stuff, and I made loads, and loads, and loads of it, Tis deadly so I thought, why not share this delight and maybe teach a few of you (ahem?Matt) how easy it is to cook stuff, even in my very very very 70?s kitchen, (its apple green Formica for those who are interested), so here ya go:
1tbsp oil
1 large white onion
1 red onion
6 cloves of garlic
1 leek ? white of, not the green bit, that?s ganky
2 sticks of celery
Approx 8-10 carrots, not big ones now, but not small ones anyway
2 sweet potatoes, ordinary size, the giant ones have NO flavour and are gank also
1 large piece of ginger
2L stock
Handful of coriander (fresh) finely minced to finish
Salt (if you have no taste buds) & black pepper to taste
Method:
1: roughly chop the onions and garlic (when I say roughly chop I mean roughly chop, this should take no longer than 30 seconds, just CHOP, nowt fancy cause there?s no point, its all going to be blended anyway)
2: Split the leek in half, wash (leeks grow from the ground, therefore are likely to have a sandy clay all the way through them depending on where they were grown, you have to get rid of this,) roughly chop as well
3: roughly chop the celery, short pieces to break the stringy bits
4: peel carrots if necessary, chop in circles approx ¼ of an inch thick
5: peel sweet potato, chop this up smallish, pieces about the size of two dice (?)
6: peel ginger, chop this up too, no need to grate, you will more than likely grate your fingers, and chopping is the same really
7: pick coriander and finely chop, this is what you bought those lovely shiny chefs knives for, mind your fingers now!!!
To cook:
1: heat oil in a large heavy bottomed pot
2: throw in onions & garlic, sweat for about 3-4 mins (sweat the onions & garlic, not you sweating, smell of BO is not good)
3: add leeks and celery, sweat for another 3-4 mins
4: add carrots, sweat for 2 mins
5: add sweet potato, sweat for 2 mins
6: add ginger
7: give it all a good mix around, the whole time the ingredients should be making a nice ?SSSSSSSSSssssssssssssssssssss? noise, if this isn?t happening, the pot isn?t hot enough, and or you forgot to turn on the cooker
8: add stock, bring to the boil, cover, leave for approx 30-40 mins on about ?not very hot? setting, its number two on my cooker, but my cooker is weird! Stir regularly
9: remove from heat, turn off your cooker!!!
10: take your blender device and either stick it into soup or pour soup into it depending on what type of device you have, blend, obviously
11: if you are really arsed you can pass the soup through a sieve, I wouldn?t bother though, if you have blended it properly
12: finish with finely chopped coriander, beautiful, eat, or freeze/refrigerate, in the fridge it will last about 3-4 days, in the freezer it will last about 3 months, I would say!
It?s lovely and you ALL have to make it, if you don?t like ginger you can make it with lemongrass either, also, just as yum.

Nikki thought the picture was an actual picture of the actual soup you made, and was very disappointed when I informed her otherwise.

Listen, I had already eaten it, anyway mine actually looked better than that one, so there! Bet your's won't, ok, next time I will rope one of my roomies (more than likely Conor)into taking some cooky pics k? Then I will be able to do it in stages and that kind of stuff m'kay? YOu better try make it, its EASY and YUMMMMMMMM!!

Noooooo!!! Don't eat that stuff, it's just dried up ganky stuff and salt and msg and modified dextrose (whatever that may be) and starch to make it gloopy, this is SO easy to make, contains virtually no fat and is really nice and nutritious!! yum-yum no?

No I used to, I retired from that a while back, well apart from the odd few days here and there for pocket money!! (shhh though) I now work in sales and am studying at night time for my Dip. Event Management, exciting stuff!!
